ORANGE, YELLOW, & GREEN - ROSE TOPPED CUPCAKES

MAKES 18.

1 pkg spice cake mix

3.9 oz pkg instant vanilla pudding mix

Orange, yellow, & green food colorings

1/3 cup + 1 pound butter

1 1/4 cups buttermilk

3 eggs

6 cups powdered sugar

2 tbs milk

1 tbs vanilla

Heat oven to 35O degrees. Line 18 muffin cups. Melt 1/3 cup butter. Beat cake mix, pudding mix, buttermilk, eggs, and butter 2 min. Divide batter among liners. Bake 2O min. Cool 1O min. Transfer from pans. *Beat remaining butter 2 min. Beat in powdered sugar, then milk and vanilla until fluffy. In separate bowls, tint 1 1/2 cups frosting orange and 1 1/2 cups frosting green with food colorings, and remaining frosting yellow. FOR TWO TONE PETALS---Squeeze separate storage bags of orange frosting and yellow frosting side by side into pastry bag with rose tip. Repeat with green frosting and remaining yellow frosting. DECORATE CUPCAKES WITH ROSES ON TOP---Hold pastry bag with wider opening of tip touching cupcake center and narrow end pointing at a 45 degree angle toward center, turn cupcake as you pipe petals.
