Honey-Vanilla Frozen Yogurt


Frozen yogurt has the consistency of soft-serve ice cream and is lower in fat than ice cream, even when made with whole-milk yogurt. This version couldn’t be simpler to make. Start with your favorite vanilla-flavored yogurt (there are some very good, organic versions out there). Sweetener is added because you can’t taste the sweetness as fully in frozen foods.


Makes about 1½ quarts


2 quarts high-quality whole-milk vanilla yogurt


3 tablespoons honey


1. Put the yogurt in a fine-mesh strainer or a colander lined with cheesecloth or paper coffee filters. Allow the yogurt to drain until thick, about 2 hours.


2. Transfer the thickened yogurt to a bowl and stir in the honey.


3. Freeze in an ice cream maker according to the manufacturer’s directions.
