FWIW (I don't own an AT-100) --

The AT-100 ProII is designed for _fully automatic_ operation.  If you can figure out how to get 12 volts DC (either from the IC-7000 "Tune" socket, or from its 12-volt power supply), and feed it to the AT-100's "DC In" connections, you should be good to go.  

If you need a 12-volt power cable, LDG recommends using "cheapham.com" -- this item:

I use the LDG tuner that was designed as a match to the IC-7000 and have been trying to find a record of where I got my cable.  I think I got it from LDG themselves. 

Icom has used the same four pin, single row tuner connector forever.  I did a quick check on eBay and the only seller of LDG to Icom cables I saw was in the UK. 

I'd check with LDG.

if you go to the ldg electronics groups io, they have all the dwg for the cables there, the icom is a very simple one,

Does the tuner have a cable for the standard Icom? if so that will work. If it will emulate an AH-3 or 4 it will work OK using the 4 pin connection on the back for the tuner/

I traded up or moved up to an IC-718 from a TS-120.  It came with the DSP module that I installed.   That was a big upgrade.  After working 100 countries on 80 meter SSB, I was desperate for some CW filters, (the filter between my ears was working too hard) especially for CW contests. But instead of buying the filters I bought the IC-7000 for my car.  The rig moved between my GMC Acadia and my shack very regularly,  ha!
In 2017 I bought a Flex 6600 and Maestro.
After using an IC-7600 in a CW contest I was ready to buy the new IC-7300.  I tried it when it first came, out and I posted that it was "a game changer".  I would have bought one but by 2017 the IC-7610 was on its way to the market.  I tried one but for the price the Flex 6600 is a lot more radio and I really like the Maestro.   Both SmartSDR and the Maestro have their pros and cons. 
I now have a IC-7300.  I can operate all my Icom rigs remotely, but with the Maestro  the radio is on the Maestro and all the loggers and control windows are on the laptop screen.  I can't say for sure about other SDR RX's but the Flex SDR builds a receiver every 4 Hz, so the filters and DSP work great! 
I used my IC-7300 during a DXpedition to Bimini, Bahamas.   Another Op used two IC-7300's for FT8 and SSB and another Op used his IC-706.  The SDR was hands down better at rejecting RF from the Kilowatt FT8 station.  And the other IC-7300 ran 100Watt FT8 24/7 without issue.  Even though the IC-706 and IC-7300 both used hi-quality BPFs during the DXpedition, the SDR does a better job keeping unwanted nearby (same band) signals out of the pass band. 
I'm so glad I have a IC-7300.  I will use it next FD and leave my IC-7000 for working the Satellites or as a back up.  And the IC-7300's built-in ATU works great!
I use a LDG AT-100 Pro II with the IC-7000.

Funny that you have to pay a premium for less.
The LAB599 PA-500 is nice looking with an 50-80 watt amp and auto tuner.
Bu the time you have added the accessories it looks like you will have over $2000 pretty easily.
Not a bad radio, especially if you are into QRP.
While I had the IC-705 pictured above I compared it with the IC-7600 below. The receivers were of comparable sensitivity, but I still like the sound of a superhet better on CW.
The IC-7100 was also comparable and none of the recent Icoms I have tried has been significantly better or worse than the others, but they each have their points.
Currently I love the IC-7600 I traded my IC-7300 for as it just sounds better than all of the others (on CW). 
The other issue for me is the touch screens and the menus that an old guy has to remember. I kinda like the control on the front panel, but that takes more space and adds to the cost with more controls to buy and install.
But then you expect more from even an older higher end radio than a mid-range unit.
However if you correct the real cost today for these very good radios with the real cost of the older radios you can see that you are getting a lot for your money!

The IC-705 and 7300 do have the same screen, but the front on the 705 is smaller. 

There is a lot to like about the 705 over the 7300.

The IC-705 and the IC7300 has the same front.  Yes too bad they don't make a 100W amp for the IC-705 and other QRP rigs.  Yes there are two amps out there but there are nearly to cost of the IC-705 or Ic-7300.

On the other hand the IC-7100 can be bought used for around $800.00

Maybe an IC-705 with amplifier and tuner?
I have one on my bench in for a MARS mod and it is a nice rig, but I would want that 100 watt amp with a built in tuner.
I am not particularly into QRP and you CAN turn the power down on most rigs if you want.

The cost difference with a color screen could be much greater than $5.00. When Icom is designing a radio they can't just select whatever the latest LCD is available on the market for cheap. They have to deal with an industrial manufacturer that plans to keep producing the screen for many years. That typically comes with a much higher price. Icom products typically have a long life cycle which means extensive planning to ensure the components needed will (hopefully) be available for many years.
The current component shortages have only made that tougher.

That all said, there is a reason the value on the used market for the 7000 is very high. It's just a fantastic radio and that color screen grabs everyone's attention. 
I think not making the 7100 color was a huge miss by Icom.

That's a really good point--why no current color display similar to the 7000?  That display, IMHO, is what made a good radio a really cool radio.

Still running my IC-7000 in the car in typical Chicago winters....for over 6 years now..  with turbo tuner and tar hell antenna...

No issues aside from replacing the inline fuse holders with a in line circuit breaker ( from audio high power versions) .

Still the best radio for mobile use.
