Thanks Guy.  Jim's approach is the 'quick and dirty' method I had thought would work, but your method seems more like the right way (just a lot more work), but it still has to be shimmed.  I'm considering a third alternative, and that is machining a completely new tailstock base from the block of steel just sitting around in my garage.  My mill just loves projects like that.
