I've done similar on some older IHC locos. But, I ended up drilling a hole from the bottom and put in a long-shank #5 head coupler (with the gladhand clipped). Use a 2-56 screw with styrene spacers

I have done 3 of the Old Time 2-8-0s from MDC and I used the regular
standard issue Kadee coupler in the front pocket of them all.
Your are correct, the centering spring does stick out a bit,

Same here. Working front couplers added to my Athearn 2-8-2s with no
centring spring and they work well using a manual uncoupler, a bent piece of
code 55 rail.
