What I'm thinking about doing is a matched set of knobs. One with the small size hole for the volume control, one with the 1/4" hole in case someone swapped out the control for one like the adafruit and one for tuning.

Sorry, I should've been more clear. I know the shaft size, what size
knob (outside diameter) were you looking for?
